I’m not quite understanding the logic here.
At the almost beginning of Star Trek First Contact, you have the entire battle against the Borg Cube and the Federation fleet (including the Enterprise-E) victorious, but yet you see the Borg Sphere escaping when the cube explodes. However, you’ll see that numerous vessels escaping the blast radius including an Akira at the end of the battle.
Why didn’t they follow the Enterprise-E, pursuing the sphere and attacking it? Surely they would have taken the sphere out and the whole plot of First Contact would have been avoided, right?

Well, firstly, that would have ended the film very quickly.
Secondly, the other ships may have been too badly damaged, or simply not able to reach the sphere in time before it went through the temporal vortex.
The Enterprise was caught inside the temporal wake, and thus was not erased from history. Any other ships outside of the wake, would no longer have existed, until the Enterprise repaired the timeline.

Enterprise-E came at the last minute. Fresh and fully intact. We don't know how long those ships were battling the Borg. I mean we heard the Defiant in the beginning during the transmissions and that was hours before the cube got close to Earth. Defiant was still there but heavily damaged.
Its possible these ships were fighting that long or enough to not be in a position to help the Enterprise. I also suspect for example the Defiant wasn't fighting nonstop for hours but hit and run with withdrawals.
