a bit more than "slight facial differences". If the one in ENT hadn't been specificaly referred to as a Gorn, I would have taken it as a completely different species.
Coudl also be a modernization of the species. Kind of like what happened with the Klingons or Telerites. Sorry if someone else already suggested this, I'm kind of skimming through the topic.

Well what I meant is it was retconned. I mean they explained why the Klingons changed but I doubt they'll ever explain why the Telerites changed. I just took it as a retcon.

Just like the Suliban, future faction/agent elements went back in time to help the Gorn improve their DNA and make alterations.

In specific, they were spliced with a genetic alteration with this template:

Below is a holo-image taken by Archer's crew of a Gorn fighting a temporal faction-modified Cardassian:

This had rather drastic effects on the timeline. The Cardassian occupation of Bajor never occurred, because after the temporal cold war, the typical Bajoran foot soldier looks like this:
