You have to be really careful cooking them, or they end up pretty tough.

Not just that but in winter they're lean and flavorless. The best time is near the end of spring when all thats left are the healthy ones that made it through winter and are now fattening back up.

Just curious... so was the flesh in the guy's toes actually decaying/dying or was it just potentially so? If the flesh was already dying off and that was spreading undetected, the dog might have actually done him a favour and saved the rest of his foot.

Generally, there is some necrosis with unhealed wounds or ulcerations in diabetics (that's why we get spider bites so easily misdiagnosed.) If it was "just" a cut, I doubt the dog would have shown any interest. In any event, what the dog did was certainly (from it's POV, at least) a positive social behavior.
