Just curious... so was the flesh in the guy's toes actually decaying/dying or was it just potentially so? If the flesh was already dying off and that was spreading undetected, the dog might have actually done him a favour and saved the rest of his foot.

Generally, there is some necrosis with unhealed wounds or ulcerations in diabetics (that's why we get spider bites so easily misdiagnosed.) If it was "just" a cut, I doubt the dog would have shown any interest. In any event, what the dog did was certainly (from it's POV, at least) a positive social behavior.
