Near where I live (where Uzume is every weekend), they graze cattle in pastures, and feed them corn (which they pick and shuck by hand) when they're in the stalls. They might occasionally buy some grain for feed, but the way I understand it, it's mostly an in-house operation with a few hundred head. No combines involved, death rate for field animals = low... Well, some of them might get stomped by the cattle, or run over by work trucks, but I'd assume not too many more than normal.
I agree that the small-animal death rate for an all-vegetarian diet would probably be higher than a normal diet.
